Today’s recipe was made specifically for this article by one of our contributors, Rob, and his niece, Genesis (who tells me that she is 10 years old). This recipe belongs to Rob, but he has graciously allowed me to publish it.
Now I grew up eating Banana Bread, Banana Nut Bread and even Zucchini Bread, but never Peanut Butter Banana Bread, so I was very curious when he told me of this recipe.
Ingredients:
1/2 cup butter, softened
1 cup white sugar
2 eggs
1/2 cup peanut butter
2 bananas, mashed
2 cups flour
1 teaspoon baking soda
Directions:
-Preheat oven to 325 degrees
-Lightly grease 5×9 loaf pan
-Cream together softened butter and sugar
-Add eggs and stir/beat well
-Stir in peanut butter, mashed banana, flour, and baking soda
-Stir well
-Pour into lightly greased loaf pan
-Bake in oven at 325 degrees for 70 minutes
Finishing:
OH!!!..don’t forget that after it’s done baking to remove bread from loaf pan and place on metal rack to cool.
